What does “Ligurian Basil” mean and why is it important?
Liguria is a region on the northwestern Italian coastline known for it’s uniquely flavorful basil plant, particularly near the region’s capital of Genoa. This basil, enriched by the salty breeze of the Mediterranean Sea, is protected by a European Union certification process known as “Denominazione di Origine Protetta”, or “Protected Designation of Origin”, which guarantees the origin and integrity of this priceless plant. Tradition holds that citizens of Genoa have been cultivating and using this basil in their traditional Pesto recipes for centuries, hence why it is often called “Pesto alla Genovese”.
What is “Dogliani”?
Dogliani (pronounced “Dough-glee-AWN-ee”) is actually a very small town of around 5,000 inhabitants in the rolling hills of Piemonte, one of Italy’s most proliferous wine regions albeit less well-known than it’s Tuscan counterpart. Dogliani wine is a Dolcetto grape varietal, which along with Nebbiolo and Barbera is among the typical grape varietals of this region. Our Dogliani is known for being light and approachable with low acidity and fruitful aromas of blue raspberry and cherry. This Dogliani is most similar to a medium-bodied Malbec and does not need to be decanted. We suggest enjoying immediately, pairing with pasta, soup, and lightly-cured meat and cheese.
Why “Trecce”?
Trecce (pronounced “trech-AY”), one of the hundreds of different pasta shapes and sizes in Italian cuisine, is a curvaceous, helix-shaped pasta that resembles curly hair. They are generally paired with thicker sauces due to their concave curve shape, which holds sauce particularly well. Our Trecce are made with the highest quality Organic Durum Wheat Semolina, which is a coarse flour made from durum wheat grown in Italy. When ground into a flour, durum wheat is known as semolina and used all over the world in bread, pasta, and porridge. This flour is darker and more golden in color than all-purpose flour, with a mild, earthy aroma.
